More Soup Recipes for Weight Loss

After our last post on dieting with soups, we got many requests for more healthy soup ideas. Soups are my personal favorite one-dish meals, so I’ve got tons of ideas that I’m happy to share.
Again, if you’re taking diet pills or if you have high cholesterol, then a healthy, hearty soup will do just the trick to keep you full without tons of calories, keep you hydrated (which is important for weight loss and if you’re taking a diet pill like generic Xenical), and lower your cholesterol.
Here are some more ideas. (By the way, I never measure when I make soup, so you can play around with the amounts yourself.)
1. Orange soup – Orange here refers to color, not flavor—many think that when I say orange soup I’m referring to a fruit soup, which I’m not. To make orange soup you add onions, carrots, sweet potato, and butternut squash to a pot of water or low sodium chicken broth. Cook until soft and then blend the soup with an immersion blender. Top with salt, pepper, and cumin for a spicy soup, or with a light sprinkle of cinnamon and sugar for a sweet soup.
2. Potato leek soup – Lightly sauté (in cooking spray and a little water) lots of leeks and onions. After they are browned add sliced potatoes and just enough chicken or vegetable broth to cover the potatoes. Cook until the potatoes are soft and then mash the potatoes and onion until smooth. (You can leave chunks if you like chunky soup.) Add some skim milk or soymilk and season as you like, bring to a boil and then reduce heat and simmer for about 10 minutes.
3. Minestrone soup – This is one of my favorite soups because it will truly fill up even the hungriest of eaters. You can make this soup with or without beef. Here’s the recipe for with. Take some lean ground beef and sauté with onions, celery, and one clove of minced garlic. Add other vegetables (Italian white beans, 1 can of tomatoes, cabbage, and parsley) along with beef (or any other) stock. Boil for 30 minutes. Add macaroni and simmer for 20 more minutes.
